The way Douglas Yu talks about starting a business is a little off-putting. No need for a machine. There is no waiting, grinding, or brewing. To make a cup of coffee, all you have to do is pour water over freeze-dried coffee crystals. It sounds like a pitch. Yu has talked about it on LinkedIn, in podcast interviews, and on TikTok live streams. But it sounds more like someone working on an idea they’ve had for years and are finally getting to build.
Yu started Diamond Brew, a coffee company in Chicago that started in August 2024 and calls itself America’s first “brewless” coffee. He is the founder and CEO of the company. The item is a freeze-dried coffee pod that can be broken down and stored in an aluminum capsule that can be recycled. There’s no need for an espresso machine, a drip brewer, or even a kettle in the strictest sense. The crystals break down in hot or cold water to make the coffee taste more like what you’d get in a coffee shop than what most people think of when they think of instant coffee. The main point of the argument is that last part, which is also the part that’s getting more support.
What the powder looks like is where the name comes from. The crystals catch and scatter light in a way that made Yu think of crushed gems when they are in certain kinds of light. The brand plays on that with a hexagonal logo, high-quality aluminum pods, and color schemes that connect the way diamonds form in nature to the way the coffee inside is pressed. Though the metaphor is a bit of a stretch, it makes sense and sticks.
The story of how Yu got here is more interesting than the product itself. He went to Emerson College, which is known for its communication and media programs rather than its business school. He started his career in editorial and food media and won the William Reed Editorial Excellence Award in 2018 for digital innovation. He wrote about people in Brazil who grow cocoa. He wrote about the food business from the inside. He said that he wasn’t native English speaking and that he was learning the unwritten rules of American business life one chance at a time. From what he writes in public, it seems like Diamond Brew is more than just a business to him. It’s the interest that builds up over ten years of work.
In early 2026, the company closed a seven-figure pre-seed round that was oversubscribed. Dream Ventures, Entrepreneur Ventures, and Michael Costello, CEO of GNC, were among the investors. Getting that many investors doesn’t just depend on having a good product; you also need a founder who can explain their vision. Yu has spent 2,000 hours on TikTok Live talking to customers and asking them what to build next. By normal startup standards, this is an odd approach, but the fact that about 65% of customers buy from them again every month suggests it’s working.
There’s an interesting piece of history buried deep on the Diamond Brew website. In 1901, while working in Chicago, a Japanese chemist named Satori Kato made the first soluble coffee that could be sold in stores in the United States. After more than one hundred years, another Asian business owner is doing something similar in the same city. Yu doesn’t really play down that comparison. His family history seems important to him, and it gives the brand a hook that goes beyond the usual startup origin story.
Yu, who is 36 years old, has written in public about how he feels like he’s behind because younger founders are raising more money and selling their companies faster. It’s a common worry in the startup world. They keep going in the right direction, though. August brought in more than twice as much money as September, making it the company’s most profitable month since it started. More and more often, bigger orders are showing up. There’s still no telling if Diamond Brew will become the category-defining product it wants to be. The coffee industry is very competitive, and people have strong habits that are hard to change. The base looks real, though. It’s hard not to notice that part.
